It’s time to step away from the usual marshmallow-topped sweet potatoes and try this casserole instead. Let's face it. Marshmallows don't have a ton of flavor, whereas the chocolate wafer cookies add extra flavor and color and on top of it, a whole lot less sugar. The casserole is seasoned with shallots, garlic, Parmesan, and a pinch of allspice. It takes just 20 minutes to assemble, then you can let your oven do the rest of the work. Serve with roast ham, pork tenderloin, or chicken.

Shallot
1 medium, finely chopped
Garlic clove
1 clove(s), finely chopped
All-purpose flour
¼ cup(s)
Table salt

Black pepper
¼ tsp, or more to taste
Ground allspice
⅛ tsp
Fat free skim milk
2 cup(s)
Grated Parmesan cheese
¾ cup(s)
Uncooked sweet potato
2 pound(s), peeled and cut into 1/8- to 1/4-inch- thick slices
Chocolate wafer
10 item(s), such as Nabisco, coarsely crushed by hand

Preheat oven to 350°F. Coat 11/2-qt baking dish with nonstick spray. In large saucepan, melt butter over low heat. Add shallot and garlic and cook, stirring often, until softened, about 3 minutes. Add flour, salt, 1/4 tsp black pepper, and allspice and whisk until smooth. Gradually whisk in milk. Bring to boil and cook, stirring often, until sauce is thickened, about 2 minutes. Remove from heat. Add cheese and stir until melted. Fold in potatoes.

Transfer to prepared baking dish, spreading out potatoes and sauce evenly. Cover with foil and bake for 45 minutes. Top with wafer cookies. Bake, uncovered, until potatoes are tender, about 20 minutes more. If desired, sprinkle with more black pepper.
