fat free mayonnaise

½ cup(s)

orange zest

1 Tbsp, grated

fresh orange juice

2 Tbsp, or bottled

lemon juice canned or bottled

1 Tbsp

fresh parsley

1 Tbsp, fresh, finely chopped


½ tsp

garlic clove(s)

1 medium clove(s), minced


  1. Place the asparagus in a large microwavable dish. Cover with plastic wrap and vent one corner. Microwave on High until crisp-tender, about 3 minutes; drain. Arrange the spears on a platter. Let cool, if desired.
  2. To prepare the orange mayonnaise, stir together the remaining ingredients in a small bowl. Spoon the mayonnaise over the asparagus. Yields about 5 asparagus and 21/2 tablespoons mayonnaise per serving.
