With a 13 minutes total prep and cook time, spinach may just be the fastest and easiest side dish to prepare. There are three types of spinach in supermarkets: baby spinach, curly spinach, and flat spinach, which is sold by the bunch. Flat spinach is more delicate than curly spinach and not as pricey as baby spinach, making it a great choice here. Give your spinach a quick rinse to ensure no gritty dirt lands in your dish. A quinoa pilaf with carrots and snow peas makes a great vegetarian protein option to accompany your spinach. Grill a chicken breast with some bell pepper halves, cut the peppers into strips and you have a full plate dinner that is beautiful and filling.

10 oz, flat variety (1 bag), trimmed and torn into bite-size pieces

Soy sauce

Instructions

  1. Heat wok or large heavy deep nonstick skillet over high heat until drop of water sizzles in wok. Add oil and swirl to coat pan. Add garlic and stir-fry just until fragrant, about 15 seconds. Add spinach, soy sauce, vinegar, and pepper and stir-fry just until spinach is wilted, about 2 minutes.
