Stir-Fried Garlic Spinach

There are three types of spinach in supermarkets: baby spinach, curly spinach, and flat spinach, which is sold by the bunch. Flat spinach is more delicate than curly spinach and not as pricey as baby spinach, making it a great choice here.
canola oil2 tsp
garlic clove(s)2 large clove(s), minced
fresh spinach10 oz, flat variety (1 bag), trimmed and torn into bite-size pieces
soy sauce1 Tbsp
rice vinegar1 Tbsp
black pepper⅛ tsp
- Heat wok or large heavy deep nonstick skillet over high heat until drop of water sizzles in wok. Add oil and swirl to coat pan. Add garlic and stir-fry just until fragrant, about 15 seconds. Add spinach, soy sauce, vinegar, and pepper and stir-fry just until spinach is wilted, about 2 minutes.
