You will be amazed at how delicious and filling a simple 5-ingredient, 10-minute recipe can be. Break out your spiralizer and see that it is useful for much more than substitute noodles. The quickly sauteed zucchini and squash are crisp-tender and richly flavorful with the essence of summer. Homemade red pepper hummus brings a bright tang and creamy layer to the sandwich. Make several of these to share or cut into portions and serve as a delicious hors d'oeuvre for a summer gathering. Add a layer of raw spinach leaves and add some roasted red pepper strips for an extra veggie hit and additional splashes of color.

Ingredients

Thin whole wheat sandwich bread (roll)

1 item(s)

Uncooked zucchini

1 medium

Yellow summer squash

1 medium

Extra virgin olive oil

1 Tbsp

Homemade hummus

1½ Tbsp, roasted red pepper

Table salt

1 pinch

Black pepper

1 pinch
