Spiralized Squash & Hummus Sandwich

A fun sandwich to utilize your spiralizer!
Ingredients

Arnold Fill 'ems 100% Whole wheat sandwich thins

1 roll

uncooked zucchini

1 medium

yellow summer squash

1 medium

extra virgin olive oil

1 Tbsp

homemade hummus

1½ Tbsp, roasted red pepper

table salt

1 pinch

black pepper

1 pinch

Instructions

  1. 1. Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).
  2. 2. Spread bottom half of toasted Sandwich Thins with hummus. Top with cooked zucchini and squash. Cap with toasted sandwich thins lid and enjoy!
