Spiralized Squash & Hummus Sandwich

A fun sandwich to utilize your spiralizer!
Arnold Fill 'ems 100% Whole wheat sandwich thins1 roll
uncooked zucchini1 medium
yellow summer squash1 medium
extra virgin olive oil1 Tbsp
homemade hummus1 ½ Tbsp, roasted red pepper
table salt1 pinch
black pepper1 pinch
- 1. Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).
- 2. Spread bottom half of toasted Sandwich Thins with hummus. Top with cooked zucchini and squash. Cap with toasted sandwich thins lid and enjoy!
