The quickly sauteed zucchini and squash are crisp-tender and richly flavorful with the essence of summer. Homemade red pepper hummus brings a bright tang and creamy layer to the sandwich. Make several of these to share or cut into portions and serve as a delicious hors d'oeuvre for a summer gathering. Add a layer of raw spinach leaves and add some roasted red pepper strips for an extra veggie hit and additional splashes of color.

Whole wheat sandwich thins

Uncooked zucchini

Uncooked yellow summer squash

1 medium

Extra virgin olive oil

1 Tbsp

Homemade hummus

1½ Tbsp, roasted red pepper

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Instructions

  1. Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).
  2. Spread bottom half of toasted Sandwich Thins with hummus. Top with cooked zucchini and squash. Cap with toasted sandwich thins lid and enjoy!
