Make several of these to share or cut into portions and serve as a delicious hors d'oeuvre for a summer gathering. Add a layer of raw spinach leaves and add some roasted red pepper strips for an extra veggie hit and additional splashes of color.

Whole wheat sandwich thins

Uncooked zucchini
1 medium
Uncooked yellow summer squash
1 medium
Extra virgin olive oil
1 Tbsp
Homemade hummus
1½ Tbsp, roasted red pepper
Table salt

Instructions

Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).

Spread bottom half of toasted Sandwich Thins with hummus. Top with cooked zucchini and squash. Cap with toasted sandwich thins lid and enjoy!
