Ingredients

part-skim ricotta cheese

1 cup(s)

garlic clove(s)

1 medium clove(s), finely minced

whole wheat pita(s)

4 item(s), (7-inch)

chopped frozen spinach

10 oz, thawed and squeezed dry

fresh tomato(es)

1 large, thinly sliced

crumbled feta cheese

½ cup(s)

dried oregano

1 tsp

crushed red pepper flakes

¼ tsp

Instructions

  1. Preheat oven to 400°F.
  2. Stir together ricotta and garlic in small bowl. Spread evenly on pitas to within ½ inch of edges. Top evenly with spinach and tomato and sprinkle with feta and oregano.
  3. Arrange pitas in single layer on large baking sheet. Bake until edges of pitas are golden, about 12 minutes. Sprinkle pizzas with red pepper flakes.
  4. Serving size: 1 pizza

Notes

To thaw spinach in the microwave, remove it from the package and place in a microwavable bowl. Microwave on the defrost setting until thawed, about 4 minutes. Place in a sieve and use your hands to squeeze out the liquid.
