Spinach Salad with Goat Cheese, Grapes and Honey Mustard Dressing

This salad pairs the sweetness of grapes with tart, creamy goat cheese. When cherries are in season, swap pitted cherries for grapes.

grapes1 cup(s), red, seedless, halved
uncooked red onion(s)⅓ cup(s), chopped, or thinly sliced
slivered almonds¼ cup(s), toasted
semisoft goat cheese¼ cup(s)
- To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt, and pepper.
- Add spinach, grapes, and onion to bowl; toss to mix and coat.
- Place about 2 1/4 c salad on each of 4 salad plates; sprinkle each with 1 Tbsp almonds and 1 Tbsp cheese.
