Spicy Sriracha-Sesame Carrot Dip

This silky dip has a delicious Asian sweet-spicy flavor that pairs well with all crudité. Leftovers would make a great sandwich or pita spread.
uncooked baby carrots1 pound(s), chopped
light mayonnaise¼ cup(s)
Sriracha hot sauce1 Tbsp, or less to taste
toasted sesame oil1 Tbsp
minced garlic2 tsp
minced ginger2 tsp
rice wine vinegar1 tsp
table salt½ tsp
uncooked scallion(s)2 Tbsp, chopped (for garnish)
- Place carrots in a microwave safe dish, cover with water and cook on High power until extremely soft, 15 minutes; drain well and chill.
- Combine cooked carrots with remaining ingredients, except scallions, in a blender or food processor; process until smooth and completely blended. Serve garnished with scallions.
