Spiced Pork Chops with Pineapple Salsa

Wake up tonight's pork chops with a zesty, sweet and spicy salsa.

dried apricot halves8 halves, chopped
uncooked red onion(s)2 Tbsp, chopped, finely chopped
jalapeño pepper(s)1 tsp, seeded and finely chopped
lime zest¼ tsp
fresh lime juice2 Tbsp
cilantro2 Tbsp, chopped
table salt¼ tsp
black pepper¼ tsp
ground allspice¼ tsp
ground red pepper¼ tsp
uncooked lean boneless pork chop(s)16 oz, trimmed (4 pieces)
cooking spray1 spray(s)
- Combine first seven ingredients in a bowl; cover and chill 30 minutes.
- While salsa chills, combine salt and next three ingredients. Sprinkle both sides of pork with salt mixture; let stand 10 minutes.
- Prepare grill.
- Place pork on grill rack coated with cooking spray; cover and grill 6 to 7 minutes on each side or until pork is no longer pink. Serve with salsa. Yield: 4 servings (serving size: 1 pork chop and about 1/3 cup salsa).
