Tired of your old chicken recipes? This orange-chipotle glaze will breathe new life into your meal rotation. Simple chicken breasts are rubbed with cumin and coriander, then basted with a spicy sweet glaze made with orange marmalade, juice and chipotle chiles. A little heat mixed with the tart and sweet juice and marmalade makes a delightful balance that kids and adults will both enjoy. Ready in a short 17 minutes, this Mexican-inspired chicken is great over quinoa with some simple roasted green beans for a quick weeknight dinner or try it cut up over chopped romaine with some black beans and corn for a main-dish salad. The glaze is also tasty on salmon and pork tenderloin.

Unsweetened orange juice

Orange marmalade

Canned chipotle peppers in adobo sauce

Ground cumin

Ground coriander

Uncooked boneless skinless chicken breast

Instructions

  1. Combine the orange juice, marmalade, and chipotle in a small bowl. Combine the cumin, coriander, and salt in a large bowl; add the chicken tossing to coat with the spices.
  2. Spray a nonstick ridged grill pan with nonstick spray and set over medium-high heat. Add the chicken and cook, turning and brushing with the glaze every 4 minutes, until browned on the outside and cooked through, about 12 minutes. Yields about 3 ounces of chicken per serving.

If you’re in a time-crunch, you can make the glaze while the chicken cooks.
