Simple chicken breasts are rubbed with cumin and coriander, then basted with a spicy sweet glaze made with orange marmalade, juice and chipotle chiles. A little heat mixed with the tart and sweet juice and marmalade makes a delightful balance that kids and adults will both enjoy. Ready in a short 17 minutes, this Mexican-inspired chicken is great over quinoa with some simple roasted green beans for a quick weeknight dinner or try it cut up over chopped romaine with some black beans and corn for a main-dish salad. The glaze is also tasty on salmon and pork tenderloin.

Unsweetened orange juice

Combine the orange juice, marmalade, and chipotle in a small bowl. Combine the cumin, coriander, and salt in a large bowl; add the chicken tossing to coat with the spices.

Spray a nonstick ridged grill pan with nonstick spray and set over medium-high heat. Add the chicken and cook, turning and brushing with the glaze every 4 minutes, until browned on the outside and cooked through, about 12 minutes. Yields about 3 ounces of chicken per serving.
