Bring this elegant meal to your dinner table in just 15 minutes. Flaky white cod glazed with a ginger-soy mixture over warm wilted spinach, a dinner you will truly be proud of. Serve on a busy weeknight or as the star of your next dinner party. These eight simple ingredients are fairly interchangeable for quick variations. Sub in your favorite green vegetable for the spinach and any flaky white fish, shrimp or scallops can work in place of the cod. Cooking times may very slightly but on a minute or 2 more should cook through any fish that is 1-inch thick or less. Add some roasted red peppers to your spinach mixture for a veggie boost.

Ingredients

Low sodium soy sauce

2 Tbsp

Scallions

2 Tbsp, minced

Cilantro

2 Tbsp, chopped

Garlic

2 clove(s), minced

Fresh ginger

1 Tbsp, peeled, fresh, minced

Dark sesame oil

3 tsp

Uncooked Pacific cod

24 oz, 4 (6-ounce) fillets

Baby spinach

1 pound(s)

Instructions

  1. Stir together soy sauce, scallions, cilantro, garlic, and ginger in a small bowl; set aside.
  2. Heat 1½ tsp oil in a large nonstick skillet over medium heat. Add fish; cook until fillets begin to brown, about 3 minutes. Carefully turn fish with a large spatula. Drizzle fish with soy-sauce mixture; cook just until opaque in center, about 3 minutes. (If sauce starts to stick to bottom of pan before fish is cooked, add a couple Tbsp water.)
  3. Meanwhile, heat remaining 1½ tsp oil in another large skillet; set over medium-high heat. Add spinach; cook, stirring constantly, just until spinach is wilted, about 3 minutes.
  4. Divide spinach evenly among 4 plates; top each with 1 fish fillet.
