Cooking lettuce, whether sautéed or grilled, yields a totally different flavor from the raw. In this recipe, the bitterness of radicchio is tamed by the sweetness of onions and a touch of sugar. A wonderful Italian side dish, this dish is eye-catching with its ruby tones. Serve with a seared flaky white fish such as grouper or tilapia and some asparagus for a spring-inspired dinner. You may also try this with roasted chicken and some mashed cauliflower. Ready in only 20 minutes, this side is good on busy weeknights or for meals when time is not an issue.

Ingredients

Olive oil

2 tsp

Vidalia onion

1 large, sliced

Sugar

2 Tbsp

Red wine vinegar

3 Tbsp

Radicchio

6 cup(s), shredded, about 1 large head, cored, sliced lengthwise about 1/4-inch thick

Kosher salt

½ tsp

Black pepper

¼ tsp, freshly ground, or to taste

Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat. Add onions; cook, stirring frequently, until light golden and tender, about 7 minutes. Sprinkle in sugar and stir in vinegar; stir to blend.
  2. Add radicchio, salt, and pepper to skillet. Cook, tossing frequently, until radicchio is tender, about 4 minutes; transfer to a serving dish.
  3. Yields about 1/2 cup per serving.

Notes

Stir in some raisins for an extra bit of sweetness.
