Veracruz sauce is a flavorful blend of juicy tomatoes, onion, cilantro and freshly squeezed lime juice. Our version of this Mexican favorite is a snap to prepare in just 30 minute and only one pan is used. Add a little heat to your dish with a pinch of crushed red pepper flakes. Serve these zesty shrimp over steamed rice or pasta. Try adding a size of avocado for a rich variation in texture and color. Light and simple, these shrimp are an easy weeknight dinner and equally delicious for a weekend lunch. Top with a fried egg for a festive brunch dish.

Ingredients

Cooking spray

Onion

1 small, white, finely chopped

Jalapeño pepper

1 small, cored, seeded, minced (don't touch seeds with bare hands)

Garlic

1 clove(s), minced

Uncooked shrimp

1¼ pound(s), large, peeled, deveined, tails removed

Tomato

3 medium, cored and diced

Table salt

½ tsp

Black pepper

¼ tsp

Fresh lime juice

1 Tbsp

Cilantro

2 tsp, fresh, minced

Instructions

  1. Coat a 12-inch nonstick skillet with cooking spray; set pan over medium-high heat. Add onion, jalapeno and garlic; sauté for 2 minutes. Add shrimp; sauté 1 minute, stirring frequently.
  2. Add tomatoes, salt and pepper; reduce heat to low and simmer until shrimp are cooked through, about 5 minutes. Stir in lime juice and cilantro; simmer 1 to 2 more minutes so flavors blend. Yields about 1 cup per serving.
