Italian cuisine is known for having simple preparations that yield big flavor. In this dish, eight simple ingredients come together in one skillet for a rich and complex tomato sauce full of heat and fresh basil. Arrabiata is an Italian term that indicates this dish is meant to be spicy and we use red pepper flakes to create the kick. If you like a milder sauce simply reduce or remove the red pepper flakes altogether. Serve this dish with some crusty bread and a simple green salad. The 30 minute preparation time is easy enough for a weeknight but the flavor will have you entertaining with this dish as well.

Ingredients

Uncooked penne pasta

6 oz

Uncooked shrimp

1 pound(s), peeled and deveined

Table salt

½ tsp

Olive oil

4 tsp

Garlic

3 clove(s), minced

Crushed red pepper flakes

¼ tsp

Canned diced tomatoes

14½ oz, fire-roasted variety

Tomato paste

3 Tbsp

Fresh basil

3 Tbsp, chopped

Instructions

  1. Cook penne according to package directions. Drain and keep warm.
  2. Meanwhile, sprinkle shrimp with 1/4 teaspoon salt. Heat 2 teaspoons oil in large skillet over medium-high heat. Add half of shrimp and cook until just pink, about 2 minutes per side. Transfer to plate. Repeat with remaining shrimp.
  3. Heat remaining 2 teaspoons oil in same skillet over medium heat. Add garlic and pepper flakes; cook, stirring constantly, until fragrant, about 30 seconds. Stir in tomatoes, tomato paste, and remaining 1/4 teaspoon salt; cook until slightly thickened, about 3 minutes. Return shrimp to skillet along with pasta; cook, stirring, just until heated through, about 2 minutes longer.
  4. Divide evenly among 4 plates and sprinkle with basil.
  5. Serving size: 1 3/4 cups
