We took the viral yogurt toast recipe—which involves spreading a quick, lightly sweetened yogurt-egg mixture onto bread and then baking—and gave it a delicious savory twist. We omitted any sweetener from the yogurt custard and whisked in grated Parmesan and salt, then spread that combo onto bread and topped with halved grape tomatoes and chives. The result is a crunchy toast with a creamy, cheesy topping that tastes indulgently rich. We like the gentle allium notes of chives, but you could use any herb you like; thyme or oregano would be especially good.

Instructions

  1. Preheat the oven to 400°F. Line a small sheet pan with parchment paper.
  2. In a medium bowl, whisk together the yogurt, Parmesan, salt, and egg. Arrange the bread slices on the prepared pan. Using your fingers, press the center of each bread slice out to the edge to flatten the interior of each slice to form a slight well. Spoon the yogurt mixture evenly over the bread slices; top evenly with the tomatoes, cut sides up, and the chives. Bake at 400°F until set, about 10 minutes. Sprinkle with black pepper, if desired.
