Bulgur is quick-cooking grain, made of wheat berries that have been steamed, dried and crushed. It is most often seen in Mediterranean and middle Eastern dishes. It has a mild taste and springy texture which is perfect in salads, meat and vegetable dishes. In just 30 minutes this veggie-filled side dish is ready to eat. Sub your favorite vegetables to make this recipe your own. Its great with grilled chicken and flank steak but also makes a vegetable main. Sprinkle some toasted walnuts over it for a light veggie lunch option, perfect for a lunchbox.


Ingredients
Olive oil
1 tsp
Uncooked zucchini
1 cup(s), sliced, chopped
Carrots
½ cup(s), sliced
Red bell pepper
½ cup(s), chopped
Scallions
¼ cup(s), chopped or sliced, chopped
Chicken broth
½ cup(s)
Dijon mustard
1 Tbsp
Fresh lemon juice
1 Tbsp
Garlic powder
1 tsp
Fresh parsley
¼ cup(s), fresh, chopped
Cooked bulgur
3 cup(s)
Instructions

In a large skillet, heat oil. Add vegetables and cook until crisp-tender, about 6 minutes.

Add broth, mustard, lemon juice and garlic powder; bring to a boil. Add parsley and bulgur; heat through. Yields about 3/4 cup per serving.
