Salmon-Ricotta Bagel Toasts

Seasoned-up ricotta cheese makes a great bagel spread that's low in fat.
bagel(s)4 small, each
part-skim ricotta cheese¼ cup(s)
fat free sour cream2 Tbsp
uncooked scallion(s)1 medium, minced
table salt⅛ tsp, or to taste
black pepper⅛ tsp, or to taste
smoked salmon4 oz, thinly sliced
- Slice each bagel into 4 thin rounds; toast and set aside.
- In a small bowl, combine the ricotta, sour cream and scallion; season to taste with salt and pepper.
- Divide ricotta mixture among bagel slices and top each with salmon. Yields 4 bagel toasts per serving.
