Move over cream cheese, our seasoned-up ricotta cheese makes a great bagel spread that's low in fat. This super simple no-cook breakfast is totally ready to travel or become part of a weekend brunch buffet in only 15 minutes. The rich smoked salmon pairs well against the mildly acidic flavor of the ricotta spread, thanks to the addition of sour cream. Make extra ricotta mixture to pop on bagels throughout the week to expedite your morning routine. Add another layer of texture and a little veggie bump with a few spinach leaves and a tomato slice on your bagel. Sprinkle with a few dill fronds if you have them on-hand.

Ingredients

Bagel

4 small, each

Part skim ricotta cheese

¼ cup(s)

Fat free sour cream

2 Tbsp

Scallions

1 medium, minced

Table salt

tsp, or to taste

Black pepper

tsp, or to taste

Smoked salmon, lox

4 oz, thinly sliced

Instructions

  1. Slice each bagel into 4 thin rounds; toast and set aside.
  2. In a small bowl, combine the ricotta, sour cream and scallion; season to taste with salt and pepper.
  3. Divide ricotta mixture among bagel slices and top each with salmon. Yields 4 bagel toasts per serving.
