An Asian-inspired dressing with a base of Italian-inspired ingredients makes up this unique salad for two. Crunchy sweet Romaine, slightly bitter radicchio and uniquely tangy hearts of palm pair well against the lush deep flavor of sesame and the zing of the mirin in the dressing. Ready in only 10 minutes, this salad makes a wonderful start to a larger meal or, when topped with some grilled chicken slices or a piece of roasted salmon, a light and filling dinner. Amp the flavor of the dressing by choosing a toasted sesame seed oil. This salad multiplies easily for larger gatherings. To make ahead, toss the lettuces together and reserve the hearts of palm and dressing for last minute tossing to preserve the crunch of the lettuces.

Ingredients

Romaine lettuce

3 cup(s), shredded, or roughly torn into bite-size pieces

Radicchio

½ cup(s), shredded, torn into small pieces

Hearts of palm

½ cup(s), sliced 1/2-inch thick

White wine vinegar

2 Tbsp

Mirin

¾ fl oz, about 4 teaspoons

Vegetable oil

Instructions

  1. In a small serving bowl, combine romaine, radicchio and hearts of palm.
  2. In a small cup, combine vinegar, mirin, sugar, both oils and salt.
  3. Pour dressing over salad and toss to coat; sprinkle with sesame seeds. Yields about 2 cups salad per serving.

Notes

Hearts of palm are grown in tropical climates and are harvested from the stem of some palm trees. They have a smooth, firm texture and mild flavor that some say is similar to an artichoke. Once opened, store any leftovers in the fridge for up to a week.
