For these adorable radicchio bundles, you should seek out an Italian-style delicatessen to get authentic prosciutto di Parma and the freshest mozzarella. The highest-quality ingredients always lead to the best flavor results. Blanching the radicchio makes it easier to work with. In order to do so, simply bring a small saucepan of water to a boil. Core the radicchio as you would a tomato and cook it in the boiling water for just 10 seconds. Run briefly under cold water to stop the cooking process, then peel leaves from the core end. This way, it'll be far easier to create the bundles to more securely enclose the meat and cheese filling.

Ingredients

Radicchio

3 oz, 12 leaves, blanched

Prosciutto

2 oz, thinly sliced and halved

Whole milk mozzarella cheese

¼ pound(s), fresh, thinly sliced

Instructions

  1. Preheat the oven to 350°F.
  2. In the center of each radicchio leaf, place a piece of prosciutto and a slice of cheese. Fold the stem end of the leaf over the filling, then fold in the sides and roll up; secure each bundle with a toothpick. Place the bundles in a baking dish. Bake until the cheese is melted and the radicchio has given off its liquid, 20–25 minutes.
