Seek out an Italian-style delicatessen to get authentic prosciutto di Parma and the freshest mozzarella.
Ingredients

uncooked radicchio

3 oz, 12 leaves, blanched

Casa Italia Prosciutto

2 oz, or other brand, thinly sliced and halved

whole milk mozzarella cheese

¼ pound(s), fresh, thinly sliced

Instructions

  1. Preheat the oven to 350°F.
  2. In the center of each radicchio leaf, place a piece of prosciutto and a slice of cheese. Fold the stem end of the leaf over the filling, then fold in the sides and roll up; secure each bundle with a toothpick. Place the bundles in a baking dish. Bake until the cheese is melted and the radicchio has given off its liquid, 20–25 minutes.
Notes
Blanching radicchio makes it easier to work with. To blanch, bring a small saucepan of water to a boil. Core the radicchio as you would a tomato and place it in the boiling water for 10 seconds. Run briefly under cold water, then peel leaves from the core end.
