Unlike traditional yeasted bread that requires hours to rise, this challah starts from a base of our favorite two-ingredient dough made from self-rising flour and fat-free Greek yogurt. We enrich the dough with beaten egg, shape it into a braid, and bake it right away—no proofing or rising required. A generous sprinkling of everything seasoning gives it a decidedly savory edge. Cut or tear off pieces, preferably warm from the oven. If you’ve made the bread ahead of time, pop it in a 250°F oven for a few minutes to reheat before serving.

Preheat the oven to 350°F. Line a large baking sheet with parchment paper.

Set aside 2 tbsp beaten egg for the topping. In a large bowl, whisk together the remaining egg, yogurt, and salt. Add the flour; stir with a wooden spoon until just combined. Knead the dough in the bowl with your hands until smooth, about 2 minutes. If the dough is too sticky to knead, sprinkle it with more flour, 1 tbsp at at time, until no longer sticky.

Lightly dust the parchment paper with flour. Divide the dough into 3 equal pieces on the paper; roll each piece into a 13-in-long rope. Pinch the dough together on 1 end to seal. Gently braid the dough ropes together and pinch the other end together to seal. Brush the dough gently with the reserved egg; sprinkle with seasoning.

Bake the bread until just golden, about 25 minutes. Coat the bread with cooking spray and bake until shiny and well browned, about 5 minutes more. Divide into 12 pieces. Serve warm.
