Pork Chops with Ginger-Lime Peach Salsa

peach(es)3 large, peeled, halved, pitted and chopped

ginger root1 tsp, grated, peeled
cooking spray1 spray(s)
- Stir together ½ teaspoon salt, brown sugar, curry powder, and cumin in small cup. Rub pork chops with seasoning mixture.
- Spray large ridged grill pan with nonstick spray and set over medium-high heat. Place pork in pan and cook, turning once, until instant-read thermometer inserted into sides of chops registers 145°F, about 6 minutes.
- Meanwhile, to make salsa, combine peaches, scallion, jalapeño, cilantro, lime juice, ginger, and remaining pinch salt in medium bowl and toss to combine. Serve pork chops with salsa.
- Serving size: 1 pork chop and ½ cup salsa
