Pork chops are one of our favorite, easy-to-cook, versatile proteins for a quick weeknight dinner. For this recipe, the pork chops are rubbed with a brown sugar, curry powder, and cumin mixture before grilling in a grill pan (you can also use your grill if you prefer). All that's left is to make the salsa, which features peaches, scallions, jalapeños, fresh cilantro, lime juice, and ginger. Just toss it all together and serve alongside the pork, and dinner is ready to go. If you don't happen to have any peaches on hand, you can use nectarines or mangoes for the salsa.

Uncooked lean boneless pork chop

1 pound(s), 4 (1/4-lb chops),center-cut, pork loin chops, trimmed

Peach

3 large, peeled, halved, pitted and chopped

Scallions

1 medium, thinly sliced

Jalapeño pepper

1 medium, seeded and minced

Cilantro

2 Tbsp, chopped

Fresh lime juice

1 Tbsp

Fresh ginger

1 tsp, grated, peeled

Cooking spray

Instructions

  1. Stir together ½ teaspoon salt, brown sugar, curry powder, and cumin in small cup. Rub pork chops with seasoning mixture.
  2. Spray large ridged grill pan with nonstick spray and set over medium-high heat. Place pork in pan and cook, turning once, until instant-read thermometer inserted into sides of chops registers 145°F, about 6 minutes.
  3. Meanwhile, to make salsa, combine peaches, scallion, jalapeño, cilantro, lime juice, ginger, and remaining pinch salt in medium bowl and toss to combine. Serve pork chops with salsa.
  4. Serving size: 1 pork chop and ½ cup salsa
