These beautiful-looking parfaits require just 7 ingredients and can be easily scaled up if you're serving a large crowd. Fresh sautéed plums in honey and cinnamon make a wonderful sauce. You'll find yourself making it over and over again for a variety of other desserts, not only this one. Just keep in mind that you have to let the plums and sauce cool for at least 30 minutes so they don't compromise the other layers, which include vanilla Greek yogurt and crunchy toasted almonds. They're so full of sweet flavor and texture, you can enjoy these parfaits for breakfast, a snack, or dessert.

Plum

2 item(s), medium, ripe but firm, diced

Honey

1 Tbsp

Ground cinnamon

¼ tsp

Lemon zest

¼ tsp

Table salt

1 pinch(es)

Fat free vanilla Greek yogurt

1½ cup(s)

Sliced almonds

¼ cup(s), toasted

Instructions

  1. In a medium nonstick skillet, over medium heat, toss plums with honey and cinnamon; cook, stirring frequently, until plums soften, cook down and mixture becomes saucy, about 3 minutes. Spoon into a small bowl and stir in lemon zest and salt; chill until cool, about 30 minutes.
  2. To assemble, spoon 1 1/2 tablespoons plum mixture into a small (about 6 oz) dish or glass; top with 3 tablespoons yogurt. Repeat to make 1 more layer and then sprinkle 1 tablespoon almonds over top. Repeat with remaining ingredients to make 4 parfaits; serve. Yields 1 parfait per serving.
