Plum Dessert Parfaits with Yogurt and Almonds

Fresh sautéed plums make a wonderful sauce. We layered ours with vanilla yogurt and crunchy toasted almonds – enjoy for breakfast, a snack or dessert.

Ingredients

2 item(s), medium, ripe but firm, diced

honey

1 Tbsp

ground cinnamon

¼ tsp

lemon zest

¼ tsp

table salt

1 pinch

fat free vanilla Greek yogurt

1½ cup(s)

sliced almonds

¼ cup(s), toasted

Instructions

  1. In a medium nonstick skillet, over medium heat, toss plums with honey and cinnamon; cook, stirring frequently, until plums soften, cook down and mixture becomes saucy, about 3 minutes. Spoon into a small bowl and stir in lemon zest and salt; chill until cool, about 30 minutes.
  2. To assemble, spoon 1 1/2 tablespoons plum mixture into a small (about 6 oz) dish or glass; top with 3 tablespoons yogurt. Repeat to make 1 more layer and then sprinkle 1 tablespoon almonds over top. Repeat with remaining ingredients to make 4 parfaits; serve. Yields 1 parfait per serving.
