Powdered peanut butter gives the ice cream incredibly rich flavor. Double the recipe and so that you can freeze some sandwiches for later on. This recipe requires only four ingredients since you're using pre-made vanilla pizzelles. This dessert comes together quickly, but you can definitely make it ahead of time. All you have to do is stir together the powdered peanut butter and water, and then lightly mash it plus some banana into vanilla ice cream. Sandwich the ice cream between the pizzelles and stick 'em in the freezer. Let them sit until the ice cream has time to firm up again, at least an hour, making them the perfect cold treat to have on hand for a warm summer evening.

Instructions

  1. Stir together powdered peanut butter and water in a small bowl until mixture is consistency of peanut butter. Place ice cream in a medium bowl; lightly mash banana and peanut butter mixture into ice cream to just combine.
  2. Spoon 1/2 cup ice cream mixture on top of 4 cookies; sandwich with remaining cookies. Freeze until ice cream mixture is firm, about 1 hour.
  3. Serving size: 1 ice cream sandwich
