Pea Guacamole with Tortilla Chips

This fun twist on classic guacamole comes together in just 10 minutes. All you have to do is purée some avocado, thawed peas, and lime juice in a food processor, then stir in chopped up red onions, fresh cilantro, and a little bit of salt. You can garnish the guacamole with some fresh, in-season tomatoes for a bit of color and more texture, or just top with more cilantro and/or chopped up onions instead. If you want to skip the tortilla chips to save some calories, you can scoop up the dip with halved, seeded sweet baby peppers instead.

Puree avocado, peas and lime juice in a mini food processor or blender until smooth; scrape into a small bowl. Stir in onion, cilantro and salt; garnish with tomato (and/or onion and cilantro).
