Picking up vibrant flavor from the fresh ginger, scallions, orange juice, and cilantro, this creative quinoa dish exudes elegance. The quinoa cooks in just 15 minutes, and while it simmers away, you can get the carrots, scallions, and ginger going until everything is nicely crisp-tender. It's a refreshing, hearty side dish for any entrée, but it's also filling enough to enjoy all on its own.

2 cup(s)

Table salt

¼ tsp

Uncooked quinoa

1 cup(s), rinsed thoroughly

Olive oil

1 Tbsp

Uncooked carrot(s)

1 cup(s), shredded

Uncooked scallion(s)

½ cup(s), sliced

Ginger root

2 tsp, freshly grated

Unsweetened orange juice

½ cup(s), fresh

cup(s), fresh, chopped

  1. Bring water and salt to a boil in a medium saucepan over medium-high heat. Add quinoa; cover, reduce heat to low and simmer until quinoa is translucent and tender, about 15 to 17 minutes. Drain off any remaining liquid.
  2. While quinoa cooks, heat oil in a large nonstick skillet over medium-high heat. Add carrot, scallions and ginger; cook over medium heat, stirring, until carrots are crisp-tender, about 1 minute. Stir in quinoa; cook, stirring, until well mixed.
  3. Remove from heat; stir in orange juice and cilantro and serve. Yields about 3/4 cup per serving.
