It’s hard to get kids to settle down enough to eat dinner on Halloween; they’re ready to get out the door for trick or treating. But you’ll have an easier time getting them to eat a solid meal when you set out these whimsical mummy pizzas. They use convenient pita bread for the crust, so they’re quick and easy to put together. And it’s a cinch to double the recipe if you need to serve a crowd; simply use two sheet pans in the oven.

Ingredients

Whole wheat pita

4 large

No sugar added fat free marinara sauce

½ cup(s)

Light mozzarella string cheese

6 stick(s)

Olives

4 olive(s), large, green variety, pitted

Olives

2 olive(s), large, black variety, pitted, chopped

Instructions

  1. Place a sheet pan in the oven and preheat the oven to 400°F.
  2. Spread each pita with 2 tbsp marinara sauce. Pull the string cheese apart into strings and arrange on the pitas to form mummy “bandages.” Cut each green olive in half crosswise to form the eyes; arrange a piece of black olive in the center of each green olive half to form the pupils. Arrange 2 olive eyes on each pizza.
  3. Carefully remove the hot pan from the oven. Arrange the pizzas on the pan. Bake until the cheese melts, 8 to 10 minutes.
  4. Serving size: 1 pizza
