This easy dish is a quick one, ready in just 20 minutes, and it’s prepared exclusively in the microwave. We’ve paired quick-cooking brown rice and deli roast beef with a fresh bell pepper, onion, and mushrooms to create a hearty meal. You can substitute 1 1/2 teaspoon fresh chopped thyme in place of the dried if you like; fresh will have a more assertive flavor. Enjoy this dish with microwave-cooked green beans. Put 4 cups trimmed green beans in a microwavable shallow dish and add 2 tablespoons water. Cover with a lid or plastic wrap with a few holes poked in it, and microwave on high 4 minutes or until the beans are crisp-tender.

Quick cooking brown rice

Instructions

  1. Microwave the rice according to the package directions, omitting the fat if desired; keep warm.
  2. Stir together the bell pepper, onion, oil, and thyme in a large microwavable bowl. Cover the bowl with plastic wrap and prick a few holes in the plastic. Microwave on High until the bell pepper is softened, about 2 minutes.
  3. Stir in all the remaining ingredients except the roast beef and microwave, covered, on High until softened, about 2 minutes. Add the roast beef and rice; stir to combine. Yields generous 1 cup per serving.
