Mixed mushroom–roast beef pilaf
Quick cooking brown rice
Sweet red pepper(s)
1 medium, chopped
½ cup(s), chopped
¾ pound(s), sliced
Deli style roast beef slice(s)
½ pound(s), trimmed and cut into strips
- Microwave the rice according to the package directions, omitting the fat if desired; keep warm.
- Stir together the bell pepper, onion, oil, and thyme in a large microwavable bowl. Cover the bowl with plastic wrap and prick a few holes in the plastic. Microwave on High until the bell pepper is softened, about 2 minutes.
- Stir in all the remaining ingredients except the roast beef and microwave, covered, on High until softened, about 2 minutes. Add the roast beef and rice; stir to combine. Yields generous 1 cup per serving.
