Lean and mild-flavored cod pairs wonderfully with the assertive flavor of miso in this easy dinner. The fish marinated for 30 minutes to an hour, absorbing a flavorful, aromatic savory-sweet mix of ingredients. We opted for white miso in this recipe because of its mellower, slightly sweet flavor. (If you want a more intensely flavored miso, pick up a red or brown one.) It then cooks quickly under the high heat of the broiler, developing a browned crust while becoming tender. Serve the cod with steamed broccoli or snow peas tossed with lemon zest and juice and salt and pepper to taste.

Unseasoned rice vinegar

Mirin

1 fl oz, (2-tbsp)

Dark brown sugar

2 Tbsp

Fresh ginger

1 Tbsp, fresh, peeled, grated

Dark sesame oil

1 Tbsp, (Asian)

Uncooked Atlantic cod

24 oz, 4 (6-oz) fillets

Scallions

1 medium, thinly sliced

Instructions

  1. Whisk together miso, vinegar, mirin, brown sugar, ginger, and oil in small bowl.
  2. Arrange cod fillets in single layer in large shallow dish. Pour miso mixture over cod. Cover and refrigerate at least 30 minutes or up to 1 hour.
  3. Preheat broiler. Spray broiler pan with nonstick spray.
  4. Remove cod from marinade and discard marinade. Place cod on broiler pan and broil 5 inches from heat just until opaque in center, about 8 minutes. Serve sprinkled with scallion.
