Take a break from traditional mashed potatoes and make these creamy sweet potatoes instead. They are blended with plain Greek yogurt to create a rich texture in this colorful side dish that would be welcome at any dinner table or a Thanksgiving potluck. These sweet potatoes are simply seasoned with just garlic, a little sugar, salt, and pepper, but you can boost the flavor with fresh herbs. Both sage and rosemary would be delicious and complement other fall flavors. Feel free to mash these to your preferred consistency, mashing the potato mixture less for more texture and more for maximum smoothness.

Ingredients

Uncooked sweet potato

3 medium, peeled, cut into 1-inch chunks (about 2 pounds)

Garlic

2 clove(s), peeled

Plain fat free yogurt

½ cup(s), Greek-variety recommended

Sugar

4 tsp

Table salt

tsp, or more to taste

Black pepper

tsp, freshly ground, or to taste

Instructions

  1. Place potatoes and garlic in a large saucepan; pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; boil until potatoes are fork-tender, about 8 minutes.
  2. Drain potatoes and garlic; transfer potatoes and garlic to a large bowl. Add yogurt and sugar to bowl; mash until smooth. Season to taste with salt and pepper. Yields about 1/2 cup per serving.
