Low-and-slow sloppy joes
Uncooked 93% lean ground beef
Canned diced tomatoes
1 small, chopped
1 rib(s), medium, chopped
Packed brown sugar
Whole wheat bread
6 slice(s), sandwich or hamburger variety
- Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the beef and cook, breaking it apart with a wooden spoon, until browned, about 5 minutes.
- Transfer the beef to a 5- or 6-quart slow cooker. Stir in all the remaining ingredients except the rolls. Cover and cook until the flavors are blended and the sauce is slightly thickened, 3 – 4 hours on high or 6 – 8 hours on low.
- Spoon 1⁄2 cup of the beef mixture into each roll. Yields 1 sandwich per serving.
