This colorful salad offers a mix of sweet and crunch thanks to the fresh mango, red bell pepper, red onion, and crisp mixed greens. It gets some heft from the quinoa and chopped chicken—you can use rotisserie chicken for ease—as well as a peppery bite from the freshly grated ginger. Substitute pineapple for the mango, or swap in another whole grain, such as bulgur, wheatberries, farro, or whatever you may have on hand.
