This tummy-warming dish is the epitome of convenience for a plant-based meal. It uses only a handful of ingredients, takes about 10 minutes to assemble, cooks in just one pot, and is ready in 30 minutes. This recipe is filling enough to serve as a main dish paired with a simple salad or served as a side dish to fish, shellfish, or poultry. For the lentils, opt for green or brown ones, which hold their shape the best when cooked. Rinse the lentils before you start, and comb through them removing any shriveled lentils or debris that you may find.


Dry lentils

Uncooked long grain brown rice

½ cup(s)

Uncooked carrot(s)

2 cup(s), shredded


3 cup(s)

Onion soup mix

1 packet(s), reduced-sodium preferred

Dried basil

1 tsp

Garlic powder

1 tsp

Olive oil

1 tsp


  1. Rinse lentils.
  2. Place all ingredients in a large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, about 20 minutes. Yields 1 cup per serving.
