This homemade coleslaw offers up a pretty variety of colors and textures flavored with a bright lemony dressing. Using a mix of mayonnaise and plain fat-free Greek yogurt gives this dish richness while helping keep it on the lighter side. Cutting the Gala apples, which have a crisp, sweet flavor, into matchsticks helps mimic the shape of the cabbage, making it easier to scoop the slaw. You can also use Honeycrisp and Fuji in place of the Galas, or, if you prefer a more tart option, use Granny Smith in this slaw. You could also substitute chopped dill or mint for the parsley, if you like.

Instructions

  1. In a medium bowl, combine mayonnaise, yogurt, lemon zest, lemon juice, sugar, salt, and pepper. Add coleslaw mix, apples, parsley, and scallions; toss to mix and coat. Cover and chill 30 minutes for flavors to blend.
