Tart and icy, this fizz provides a refreshing pick-me-up that is ready to drink in just 10 minutes. Blending the mint, lemon juice, sugar, and club soda means you get a cooling citrusy sweetness in every sip. The lemony sorbet amps up the citrus factor. The two most common types of mint are spearmint and peppermint. Of the two, spearmint is the variety most commonly sold in grocery stores. The light green, spear-shaped leaves offer the classic sweet mint flavor. Peppermint leaves, which are darker green and smoother than spearmint, contain menthol, which has a more bitter flavor that’s less desirable.

Instructions

  1. Combine 2 mint leaves (with stems removed), lemon juice, sugar and 1/2 cup of club soda in a blender; blend until mint is minced.
  2. Divide mixture between 2 tall glasses. Add 1/3 cup of sorbet to each glass and top each with 1/2 cup of club soda. Garnish with fresh mint and serve.
