This recipe combines the richness of risotto and Havarti with fresh dill and smoked salmon for a unique take on an Italian classic. If you’re looking to dabble in risotto without diving in to a more complicated recipe, this easy recipe is a great place to start. Note that dill has a tendency to wilt more quickly than some herbs, so be sure to choose dill that is crisp and looks fresh. It’s a relatively quick, one-pot dinner that offers an easy chance to break your dinner routine, especially when paired with a simple side salad that complements the rich flavor of this risotto.
