Ham and Swiss Paninis

Serve each sandwich with a handful of celery sticks and carrot sticks.
unsalted butter2 tsp, softened
high-fibre bread4 slice(s)
low-fat Swiss cheese2 oz, 2 (1-ounce) slices
lean ham6 oz, 6 (1-ounce) reduced-sodium slices
- Preheat a panini or sandwich press or set a nonstick ridged grill pan over medium heat. Spread 1/2 teaspoon butter on one side of each slice of bread.
- Place 2 slices of the bread, buttered side down, on a work surface and layer each with 1 slice Swiss and 3 slices ham. Cover each sandwich with the remaining slices of bread, buttered side out.
- Place the sandwiches on the press and close the lid or place them on the grill pan and cover with a heavy skillet. Cook until the sandwiches are browned and the cheese is melted, about 5 minutes. (Turn the sandwiches halfway through the cooking time if using a grill pan.) Cut in half and serve. Yields 1 sandwich per serving.
