Grilled mahi mahi with lemon-herb aioli

Grill mahi-mahi and serve with a zesty seasoned mayonnaise for a delicious dinner that you can prepare in just 20 minutes. Mahi-mahi's firm texture make it ideal for grilling. If you can't find mahi-mahi, halibut makes a nice substitution. Fish has a reputation for sticking on the grill, but there are things you can do to prevent that. Most important, make sure your grill grate is impeccably clean: Rub it vigorously with a wire brush to remove any debris or corrosion before heating the grill. Garnish with lemon and tarragon.


Ingredients
Uncooked mahi mahi
1½ pound(s), four 6-oz skinless pieces
Olive oil
1 tsp, extra-virgin
Table salt
¼ tsp, or to taste
Black pepper
⅛ tsp, freshly ground, or to taste
Reduced calorie mayonnaise
2 Tbsp
Chives
1 Tbsp, fresh, chopped
Water
1 Tbsp
Fresh tarragon
1 tsp, chopped
Lemon zest
½ tsp
Fresh lemon juice
½ tsp
Jarred minced garlic
¼ tsp
Instructions

Preheat outdoor grill to medium-high or place ridged grill pan over medium-high heat.

Brush fillets with oil and sprinkle with salt and pepper. Stir mayonnaise, chives, water, tarragon, lemon zest, lemon juice, and garlic together in small bowl; set aside.

Grill fillets, turning once, just until cooked through, 8−10 minutes. Serve drizzled with sauce.
