Grilled ham topped with nectarine salsa is fabulous summer fare. Enjoy the delicious contrast between the cold salsa with a sweet and tangy flavor and hot, smoky ham. Peaches make a nice substitute for the nectarines. You can also let the salsa sit for about an hour so that the flavors mix even better. Serve it with grilled corn on the cob that's sprinkled with fresh lime juice, salt and chili powder. You can also serve the salsa as a dip with tortilla chips or cinnamon chips.

Ingredients

Nectarine

3 item(s), medium, or peaches, diced (about 1 1/2 cups)

Splenda Granulated no calorie sweetener

1 tsp, or to taste

Red onion

2 Tbsp, chopped, diced

Cilantro

2 Tbsp, fresh, chopped

Fresh lime juice

1 Tbsp

Jalapeño pepper

½ small, fresh, minced (do not touch seeds with bare hands)

Extra-lean ham steak

4 slice(s), about 1 lb

Chili powder

¼ tsp

Ground cinnamon

Instructions

  1. Preheat grill or grill pan.
  2. In a medium bowl, combine nectarines, onion, cilantro, lime juice, jalapeno and Splenda; toss to coat and set aside.
  3. Sprinkle ham with chili powder and cinnamon; lightly coat with cooking spray. Grill, turning once, until lightly charred and hot, about 3 to 5 minutes; remove to serving platter and serve with salsa. Yields 1 ham steak and about 1/3 cup of salsa per serving.
