A sophisticated version of a grilled cheese sandwich, this rendition ups the health quotient by adding apples and onions and cutting back on cheese. We sautéed the onions in apple cider vinegar for an additional flavor. We suggest using firm apples for this recipe. When purchasing apples, look for apples that are firm to the touch. They should not be soft, discolored or indent when you press the skin. We used granny smith apples for this recipe because they mix so perfectly with the brie, but you could also use red apples or even pears.

Ingredients

Onion

½ medium, Vidalia, or other sweet onion, thinly sliced

Apple cider

¼ cup(s), or apple juice

Sourdough bread

4 slice(s), medium

Granny Smith apple

1 small, or 1/2 medium, thinly sliced

Brie cheese

2 oz, thinly sliced

Instructions

  1. Spray a large, nonstick skillet with cooking spray. Place pan over medium-high heat and add onions. Sauté until soft and golden brown, adding cider as needed to prevent burning.
  2. Lay 2 slices of bread on a clean surface and divide apple slices, Brie and caramelized onions among them. Cover each with a second piece of bread.
  3. Spray skillet again and set over medium heat. Grill sandwiches until cheese melts and bread browns. Cut into halves and serve hot.
