There’s no need for a heavy dressing with these greens thanks to the smoky flavor of turkey bacon. Peas and scallions add nice texture and flavor to this tasty salad. Mixing the ingredients for the vinaigrette in the same skillet that you cook the bacon in makes cleanup for this recipe much easier. And because you mix the ingredients for the vinaigrette in the same skillet that you cook the bacon in, you want to be certain not to scorch the pan by cooking it at too high of a temperature.

Ingredients

Frozen green peas

1 cup(s), thawed or fresh peas

Fresh mixed greens

4 cup(s)

Scallions

½ cup(s), chopped or sliced, thinly sliced

Cooked turkey bacon

6 slice(s), diced (cooked in a nonstick skillet)

Mineral water

½ fl oz

Balsamic vinegar

¼ cup(s)

Fresh lemon juice

¼ cup(s)

Black pepper

½ tsp

Instructions

Combine peas, greens and scallions in a medium bowl.

Using the same skillet you cooked the bacon in, add back the diced bacon plus the water, vinegar and lemon juice and cook 1 to 2 minutes more.

Pour bacon dressing over salad, toss gently to coat. Season with black pepper and serve immediately. Yields 1 1/2 cups per serving.
