In medium bowl, mix beef, onion, garlic, oregano, salt, and black pepper and gently form into 4 (3⁄4-inch-thick) patties.

Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill. Grill patties for 4 minutes. Turn patties over and continue to grill until cooked through, 3 to 4 minutes more.

Build burgers with rolls, patties, spinach, and cheese.
