Greek Chicken Sausage Sandwiches

Serve these sandwiches with a Greek salad for a fabulous grilled meal. A yogurt sauce flavored with cucumber, dill, salt and pepper makes an excellent topping for these Greek-inspired favorites. Make the yogurt topping no more than 10 minutes before you prepare the hot dogs or the sauce may break and get watery. We grilled the sausages over medium-high heat for more even cooking. The sausages cook gently while holding their flavor. Serve the sausages with roasted potatoes or fruit salad.


Ingredients
Plain low fat Greek yogurt
½ cup(s)
English cucumber
¼ cup(s), diced
Dill
1 Tbsp, or mint leaves, finely chopped
Table salt
⅛ tsp
Black pepper
1 pinch(es), freshly ground
Cooked chicken sausage
12 oz, feta and spinach variety (four 3-oz sausages)
Reduced calorie hot dog bun

Instructions

Preheat grill to medium-high heat.

In a small bowl, combine yogurt, cucumber, dill or mint, salt and pepper.

Grill sausages directly over heat, turning as needed, until grill marks appear and heated through, about 5 minutes. Grill buns until lightly toasted, about 1 minute.

To serve, place sausages in buns; top each with 3 Tbsp yogurt mixture (or spread some sauce in bun, add a sausage and then top with more yogurt sauce).
