Cooked cubed butternut squash
1½ cup(s), acorn squash, zucchini, and/or kale (roasted with nonstick spray and seasonings to taste)
Cooked skinless boneless chicken breast(s)
3 oz, cubed
1 Tbsp, or other fresh herbs
Plain fat free Greek yogurt
1 pinch(es), or to taste
- In a medium bowl, layer quinoa, veggies, chicken, and herbs.
- In a small bowl, stir yogurt and turmeric to combine; into bowl with quinoa, spoon yogurt.
