This easy dish together in just five minutes because it relies on putting leftovers to use. Quinoa, which adds a nutty flavor to this dish, is incredibly easy to cook. It's important to rinse quinoa before using, even if the package says it's pre-rinsed. Rinsing the quinoa gets rid of its natural coating that has a soapy taste to it. Feel free to swap out different vegetables depending on what you have on hand. This makes an excellent one-dish meal or you can serve it with a salad or pita bread. Enjoy reheated or at room temperature.

Ingredients

Cooked quinoa

Cooked butternut squash

1½ cup(s), cubed, acorn squash, zucchini, and/or kale (roasted with nonstick spray and seasonings to taste)

Cooked skinless boneless chicken breast

3 oz, cubed

Fresh parsley

1 Tbsp, or other fresh herbs

Plain fat free Greek yogurt

¼ cup(s)

Ground turmeric

1 pinch(es), or to taste

Instructions

  1. In a medium bowl, layer quinoa, veggies, chicken, and herbs.
  2. In a small bowl, stir yogurt and turmeric to combine; into bowl with quinoa, spoon yogurt.
