Plain greek yogurt serves as the healthy base for this dressing that combines the tasty flavors of dill, parsley and garlic. Xantham gum serves as a binder in the dressing, making the mixture thicker and holding all of the ingredients together. We used 1/8 of a teaspoon, but you can use the amount to suit your taste. This dressing tastes delicious over salads or makes a great dipping sauce for raw vegetables. It takes just 10 minutes to prepare and you can make it ahead and store it in the refrigerator. Or double the batch and enjoy it all week long.

Ingredients

Plain fat free Greek yogurt

½ cup(s)

Water

2 Tbsp, warm (or more as necessary)

Extra virgin olive oil

8 tsp

Jarred minced garlic

1 tsp

Fresh parsley

3 Tbsp, minced

Kosher salt

1½ tsp

Black pepper

½ tsp

Xanthan gum

tsp, or add enough to desired consistency (optional)

Instructions

  1. Whisk together yogurt, water, oil, garlic, dill, parsley, salt and pepper; thicken with xathan gum (optional).
