Flautas don't have to be off-limits now, thanks to these crunchy, baked rolls of lean, ground turkey seasoned with a taco spice blend. Enjoy them as an appetizer at your next party - they really are the perfect finger food. Or, take them to the table as festive lunch or dinner main, layered with shredded iceberg and chopped tomatoes in addition to the sour cream and avocado toppings the recipe suggests. These are also a great snack or lunchbox indulgence. Since they're ready in half an hour, you can bake them up quickly for impromptu gatherings or tote them to the next neighborhood potluck, and make the avocado into a simple guacamole for dipping on the side.

Olive oil cooking spray

Uncooked extra lean ground turkey breast

1 pound(s)

Reduced sodium taco seasoning

1¼ oz

Water

½ cup(s)

Flour tortilla

4 tortilla(s), medium, whole-wheat

Salsa

1 cup(s)

Avocado

1 item(s), medium, thinly sliced

Instructions

  1. Preheat oven to 400ºF. Coat a shallow baking pan with cooking spray.
  2. Set a large nonstick skillet over medium-high heat and preheat. Add turkey and cook until cooked through, about 6 to 8 minutes, breaking up the meat as it cooks. Add seasoning packet and stir to coat. Add water and simmer until liquid is absorbed, about 2 minutes.
  3. Spoon 1/4 of turkey mixture onto center of each tortilla; roll up tortillas tightly and tuck in ends.
  4. Place flautas in prepared pan and spray with cooking spray. Bake until golden brown, about 15 minutes. Top flautas with salsa and avocado slices just before serving.
