Move over plain beef burgers. These Greek-inspired grillers are spiked with salty feta and then topped with a garlic- and mint-yogurt sauce. You can taste summertime in every bite, and they are perfect for the backyard barbecue. The delicious patties are made in minutes, and are chock full of herbs and spices, with a bit of egg to bind them. As a time saver, make the yogurt-mint sauce ahead. In fact, whip up a double batch to keep on hand in the fridge as a great condiment for wraps or sandwiches or as a dressing drizzled over a simple, sliced cucumber salad. The burger's multi-colored veggie garnish gives you a vegetable helping with almost zero effort, and you could add a side salad or some roasted eggplant for a bigger veggie boost.

Ingredients

Uncooked 93% lean ground turkey

Crumbled feta cheese

3 Tbsp

Egg whites

Scallions

1 medium, minced

Jarred minced garlic

3 Tbsp, divided

Fresh oregano

2 Tbsp, chopped

Fresh parsley

2 Tbsp, chopped

Lemon zest

1 tsp

Dried oregano

1 tsp

Ground cumin

1 tsp

Vinegar

1 Tbsp, sherry-variety

Plain low fat yogurt

6 oz, Greek-style

Peppermint leaves

3 Tbsp, fresh, chopped

Whole wheat pita

4 small

Red onion

½ medium, sliced into 4 thin slices

Yellow bell pepper

½ small, sliced into 4 thin rings

Tomato

½ medium, sliced into 4 thin slices

Instructions

  1. In a large mixing bowl, mix together turkey, cheese, egg, scallion, 2 tablespoons garlic, oregano, parsley, lemon zest, oregano, cumin and vinegar until thoroughly combined. Shape turkey mixture into 4 patties; place on a plate and refrigerate until ready to cook.
  2. To make yogurt sauce, place yogurt, mint and remaining tablespoon of garlic in a small bowl; stir to combine and set aside.
  3. Heat an outdoor grill or a grill pan over medium-high heat. Add burgers and cook, covered, without moving, for 4 to 5 minutes. Uncover and flip burgers; cook on other side, uncovered, until cooked through, about 4 to 5 minutes more. (Repeat with remaining burgers if they do not all fit on grill pan at once.)
  4. To assemble burgers, make a large slit in each pita. Place a burger in each pita and fill each with 2 tablespoons of yogurt sauce and 1 slice each onion, pepper and tomato. Yields 1 burger per serving.
