This healthier spin on meatloaf is made from a mix of ground turkey and turkey breast in place of the fattier beef-pork-veal combo that is a diner menu mainstay. Though we made mini meatloaves, you can make one large meatloaf if you prefer. It will take about 45 minutes to cook.

1 medium, finely chopped

Red bell pepper

1 medium, finely chopped

Uncooked 93% lean ground turkey

Uncooked extra lean ground turkey breast

Ketchup

1 cup(s), divided

Seasoned breadcrumbs

½ cup(s)

Egg

Dijon mustard

2 Tbsp

Worcestershire sauce

1 tsp

Garlic powder

1 tsp

Table salt

¼ tsp

Black pepper

¼ tsp, freshly ground

Instructions

  1. Preheat the oven to 400ºF. Place the oven rack in the center of the oven. Coat a baking sheet with cooking spray.
  2. Coat a large nonstick skillet with cooking spray and set over medium heat. Add the onion and bell pepper; cook, stirring occasionally, until softened, about 5 minutes. Remove from the heat and let cool 10 minutes.
  3. Stir together the ground turkey and turkey breast, onion mixture, 1/2 cup ketchup, breadcrumbs, egg, mustard, Worcestershire sauce, garlic powder, salt, and pepper in a large bowl. Shape the mixture into 8 mini oval-shaped loaves, about 4 inches long each, and place on the prepared baking sheet. Spread the remaining 1/2 cup ketchup over the top of the meatloaves. Bake until a thermometer inserted into the center of a meatloaf registers 165ºF, about 25 minutes (then broil 1 to 2 minutes, if desired, to allow the ketchup to darken).
