If you’re making this sandwich and not eating it for a few hours, line both sides of the bread with lettuce to prevent the bread from getting soggy.

Ingredients

Plain fat free Greek yogurt

2 Tbsp

Curry powder

½ tsp, Madras variety

Apple cider vinegar

½ tsp

Table salt

1 pinch

Eggs, hard-boiled

2 item(s), chopped

Fresh apple(s)

½ cup(s), diced

Uncooked scallion(s)

1 small, sliced

Cilantro

1½ Tbsp, chopped

Boston lettuce

2 leaf/leaves, or other lettuce leaves

Rye bread

2 slice(s), marble variety (toasted, optional)

Instructions

  1. In a small bowl, stir together yogurt, curry powder, vinegar and salt. Add eggs, apple, scallion and cilantro; toss. Serve on lettuce-lined bread.
