Curried egg & apple salad sandwich
Plain fat free Greek yogurt
½ tsp, Madras variety
Apple cider vinegar
2 item(s), chopped
½ cup(s), diced
1 small, sliced
1½ Tbsp, chopped
2 leaf/leaves, or other lettuce leaves
2 slice(s), marble variety (toasted, optional)
- In a small bowl, stir together yogurt, curry powder, vinegar and salt. Add eggs, apple, scallion and cilantro; toss. Serve on lettuce-lined bread.
