For an easy and earthy addition to the Creole sauce, add an 8-ounce package of sliced white or cremini mushrooms along with the bell peppers.

Ingredients

Mixed-vegetable juice

2 fl oz, or tomato juice

Bell pepper

2 item(s), medium, thinly sliced

Onion

1 medium, thinly sliced

Celery

2 rib(s), medium, thinly sliced

Uncooked Atlantic cod

4 fillet(s), (6-ounce each)

Fresh parsley

2 Tbsp, fresh, chopped

Cooked long grain brown rice

2 cup(s)

Instructions

  1. Combine the vegetable juice, bell peppers, onion, and celery in a large nonstick skillet; bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are just softened, about 4 minutes.
  2. Nestle the cod into the vegetables. Reduce the heat and simmer, covered, until the fish is just opaque throughout, about 8 minutes. Sprinkle with the parsley and serve with the rice. Yields 1 cod fillet, 1 cup vegetables with sauce, and 1⁄2 cup rice per serving.
