Reduced sodium chicken broth

Uncooked orzo

Cooked extra lean low sodium boneless ham

Grated Parmesan cheese

Instructions

Heat oil in large heavy nonstick skillet over medium-high heat. Add bell pepper and cook, stirring, until softened, about 3 minutes. Add mixed vegetables, broth, thyme, and salt; bring to boil.

Add orzo to vegetable mixture and return to boil. Reduce heat and cook, covered, stirring occasionally, until orzo is tender and liquid is absorbed, about 10 minutes. Stir in ham, Parmesan, and scallions; cook until heated through, about 2 minutes longer.
