These brownies are super-fudgy and super-rich. Don't be nervous that the batter is too thick - it will bake as expected.


unsweetened cocoa powder

plain lowfat yogurt

½ cup(s), regular yogurt - not Greek

vanilla extract

  1. Position rack in center of oven. Preheat oven to 350°F.
  2. Whisk together cocoa powder, sugar, flour, baking powder, and salt in a large bowl. Stir in yogurt and vanilla using a wooden spoon. Batter will be very thick (use your hands to incorporate all the ingredients, if necessary).
  3. Coat an 8-inch square baking pan with cooking spray; add batter to pan and spread into an even layer.
  4. Bake until a toothpick inserted into center of brownies comes out with a few moist crumbs attached, about 20 minutes. Cool on a wire rack for 15 minutes before cutting into 16 even pieces.
  5. Serving size: 1 piece


Be sure to use regular (not Greek) yogurt in this recipe. Using Greek yogurt will make the batter too thick. Sprinkle with 1 tsp powdered sugar, if desired (won't change the recipes's SmartPoints value).
